Eggless Tutti Frutti Mini Cakes
Tutti Frutti cupcakes are colourful. Its soft and spongy, everyone irrespective of age would go crazy about tutti frutti for its colour, crunch and simplicity. This recipe is eggless, having said that it is equally spongy unlike the other cakes.
All purpose flour 1 cup
Baking powder 1 teaspoon
Baking soda 1/2 teaspoon
Sugar 1/2 cup
Oil 1/4 cup
Curd 1/4 cup
Milk 1/2 cup
Apple cider Vinegar or (any vinegar) 1 tablespoon
Yellow food colour a pinch
Tutti Frutti 1/4 cup
Vanilla essence 1 teaspoon
How to start?
Sift together all purpose flour, baking powder and baking soda in a bowl. In a bowl, beat curd and sugar together till the sugar dissolves. Add vanilla essence and oil. Beat well for another 2 to 3 minutes. Add the sieved all purpose flour, baking powder and baking soda along with milk and mix.
Dust tutti frutti in a tablespoon of all purpose flour and add this to mixture. We do this so that the tutti frutti doesn't settle down at the bottom of the cupcake. Gently mix the batter. Finally add apple cider vinegar and mix well.
Preheat the oven to 180 degree centigrade. Pour the batter into muffin tray lined with cupcake liners. Bake in preheated oven at 180 degree centigrade for 20-25 minutes. Check whether it is cooked by inserting a toothpick. If it comes out clean, its done, else bake for another 5 minutes.
Tutti frutti cake is ready. Allow it to cook for sometime before you take the bite.
